Why do scientists overlook certain data which disproves thier theories and highlight others which support them?

And why do they say anyone who disagrees with them is crazy or a conspiracy theorist instead of allowing people to draw thier own conclusions and make up thier own minds regarding issues? Wouldn't you say that UnDemocratic of them as well as unScientific?
